Ordering No.: F.DICK Sharpening steels
description: In the world, Friedr. Dick is also famous for the production of whetstones. No other company in the world produces so many different types of whetstones.
Dick is also the only manufacturer in the world that produces whetstones in the traditional way. Thanks to the latest hardening technologies, Dick has a strong, durable core and a surface that shows little wear and tear.
In our range you will find a range of sharpeners suitable for chefs, butchers and the home.
They differ in shape, length and coarseness (tensile strength).
In terms of shape, we distinguish between round and oval (lentils).
In the past, they were mainly made round, but nowadays oval-shaped sharpeners have gained more popularity, because the knife touches the oval-shaped sharpener with a larger surface area and is therefore sharper.
The important thing about the length of the whetstone is that it should always be longer than the knife you are sharpening.
We offer different lengths of whetstones.
We offer sharpeners in lengths of 24,25,28, the most common length is 30 cm and the longest is 35 cm.
According to the coarseness of the stroke we distinguish between coarse stroke, standard and fine stroke sharpeners.
The coarse-textured whetstones remove the most material. The knife is sharpened very quickly, but this sharpening should be followed by tightening of the blade with a fine-drawing sharpener, or by polishing with a puller to close the blade.
With a standard pull, there are whetstones that are the golden mean and therefore the most popular in the home.
With a gentle pull, there are sharpeners that sharpen the knife very gently, they take little material, but the knife needs to be sharpened more often.
Unique among F. Dick whetstones are the sapphire whetstones. They have little material removal. The fine surface with sapphire dust also gently polishes the blade. The cut is much cleaner and smoother.
Dick also makes combination whetstones, which are square and offer two strokes in one, e.g. standard with fine or fine with polishing.
The final distinction is the handles of the sharpeners, which are made from either metal, plastic (where there are many colours to choose from) or wood.
You will also find a guard on the handle of the sharpener to prevent the knife from slipping on your hand. In the decorated series, it is often metal and complements the wooden or inlaid handles that are part of the various anniversary series and are also decorative in the kitchen.
A good knife should not be missing in any kitchen, because only with a sharp knife is cooking a pleasure !

The beautifully finished blade is made from the combination of two different steels, which creates a fascinating contrast between the mirror-polished blade and the satined opposite site. The mirror-polished core of the blade is made from VG MAX Steel with a hardness of 61±1 HRC and the satined outer material from SUS420J2 steel: a combination that guarantees a high corrosion resistance and the long-lasting performance of these blades.
The production process of the Composite blades is based on a new technology in the aircraft construction sector and guarantees high resistance and extreme precision. description: BRAND NEW model range, this series is aimed at the true knife aficionado or professional chef. . The Global Sai range has been developed by Komin Yamada who also designed the first Global knife.
Global Sai have 3 exceptional new features:
1) Stylish, ergonomic handles. This brand new handle design, using Global’s experience has been designed in consultation with many chefs and knife experts to allow the utmost comfort and safety in use. The Global Sai range has 7 dots along the handle instead of the fully dotted handles of the classic Global range. This is to represent the traditional Japanese bushido- way of the warrior where there are 7 virtues of the samurai.
2) 3-ply special steel. The blade material consists of a central core material of substantial hardness to keep an extremely hard edge, being surrounded by layers of softer, corrosion resistant stainless steel. The outer edges of the blade are made from the same steel as the handles making the forge between blade and handle even stronger.
3) Hammered blade finish. The special individually hammered finish not only looks stylish but also is designed so that the small hollows create air pockets between chopped food assisting and allowing food to pass across the blade without sticking.

Ordering No.: F. DICK 1905 knives
description: In 1905 the Swabian knife manufacturer Friedr. Dick developed a series of knives with aesthetic metal rings around the handle. These replaced the previously common rivets which were used to mount the handle onto the steel of the knife. Friedr. Dick was founded in Esslingen in 1778 and after more than 225 years is still a family-owned enterprise. Maximum quality and optimum handling, designed according to the ergonomic requirements for professionals, make Dick products the leading brand for professional chefs worldwide.
The special design of 1905 and the therefore necessary special techniques have been further developed by Friedr. Dick. Both then and now the knife series 1905 is captivating thanks to its exceptional appearance. Modern materials and manufacturing processes are used today. The symmetrical steel rings are inseparably connected to the moulded handle, using a unique technology. The blade is well sharpened and the knife enjoys perfect equilibrium, with tapering at the tip. It goes without saying that the blade is made of best quality German XCrMoVMn stainless steel, preferred by reputable chefs.
A finely dispersed martensitic structure is produced (with a hardness of over 60 HRc) thanks to a hi-tech tempering process at temperatures of approx. 1950° F and cryogenic treatment at temperatures as low as -310° F. Targeted tempering in several stages at approx 392° F produces a unique, dynamic and sharp cutting edge. During this process, the hardness is carefully reduced to 55HRc. This hardness is required as it guarantees sharpness and retention of sharpness and also facilitates resharpening. Combining these two requirements in a balanced manner is an art. Highly experienced craftsmen add on the end cutting edge by hand

Ordering No.: F. DICK Premier Plus knives
description: Of course with the knives of the Premier Plus series the composition of the steel and the special hardening technique are the most obviously important factors. The steel elements are made from the alloy X 45 Cr Mo V15, in which each component has a special part to play: chromium strengthens the steel against wear and tear, molybdenum gives it resistance to corrosion and carbon its absolute hardness. This first class substance is then forged into a perfectly balanced and ergonomically shaped knife.
Particularly worthy of note, however, is the sophisticated design of the handle. A special manufacturing technique results in the blade and the handle being so tightly linked that not even the finest crack or gap is left. Unlike traditional knives with a handle housing, it is impossible for food residue or liquids to penetrate. As is standard with the Friedrich Dick company, each finished knife of the Premier Plus series is sharpened and honed by hand. Cutting becomes an experience – this is something you can expect from Friedr. Dick.

Ordering No.: Wüsthof Knife Sharpener
description: Highlights:
- Safe and easy to use, this two-stage knife sharpener requires nothing but a few easy strokes to keep blades sharp.
- Can be used for serrated and scalloped edges (ceramic fine stage only).
- Soft Grip Handle.
- 2 Stage Knife Sharpening
Use:
Place sharpener on a flat work surface. Hold the sharpener with one hand as indicated and the knife handle with the other. Insert knife blade fully into the slot at a 90° angle to the sharpener. Apply moderate downward pressure on the blade while pulling the knife toward you through the appropriate notch. Repeat this action, always pulling the blade from heel to tip (never back and forth) through either the carbide or the ceramic notch.
Note: The first stage carbide (coarse) sharpens dull edges. The second stage ceramic (fine) provides a polished, razor sharp edge. A reasonably sharp knife may only require this light honing.
- Care: Always clean your sharpener after use. Clean with a damp cloth or mild brush, wipe dry.
Do not rinse with water.

Ordering No.: Wusthof knife sharpener IKON
description: Highlights:
- Innovative knife sharpener for left and right-handed use.
- Two levels are available for sharpening knives, depending on how much cutting performance has been lost.
- The first level, "Coarse", is recommended for when the knife is blunt.
- The second level, "Fine", is suitable both for fine sharpening following on from the first level or for regular resharpening of the blade. - - The ceramic slats grind the blade and the knife regains its original sharpness.
- Knives with a serrated edge should only be sharpened using the second level in order to remove any burrs that have developed.
- The traditional company based in Solingen, Germany, has designed the knife sharpener to make it easy for anyone, even without experience, to sharpen knives.
- As the device produces a cutting angle of approximately 30 degrees, it is suitable for sharpening all sorts of different knives.
- The blade of the knife is inserted vertically into the slot with the grinding slats.
- The rear end of the blade is placed between the slats and pulled gently through to the tip, keeping the blade straight.
- Meanwhile, the handle of the device should be held with the other hand.
- The ergonomic handle and the non-slip base of the knife sharpener ensure safe handling.
- The process is repeated depending on the bluntness of the blade.
- In order to achieve the best possible result, the knife blades should be cleaned before and after every grinding process.
